In a large bowl, combine rye flour, bread flour, sourdough starter, and water.Mix until a shaggy dough forms.

Cover the bowl with a damp towel and let it rest at room temperature for 30 minutes.

Add salt to the dough and knead for 10 minutes until smooth.You can use a stand mixer with a dough hook.

Shape the dough into a round loaf and place it in a floured proofing basket.

Cover the basket with a towel and let the dough rise at room temperature for 2 hours.

Preheat the oven to 450°F (230°C).

Transfer the risen dough to a baking sheet, slash the top, and bake for 40 minutes.Spray water in the oven for a crispy crust.

Cool the bread on a wire rack before slicing and serving.
