Preheat the oven to 400°F (200°C).

Sear the beef fillet in a hot pan with olive oil until browned on all sides. Let it cool.

Wrap the beef fillet in prosciutto and mushroom duxelles.

Roll out the puff pastry and wrap the beef in it, sealing the edges tightly.

Brush the pastry with beaten egg for a golden finish.
